Pure honey
Roughly three-quarters of the honey sold in America was imported. This wasn't.
Every jar comes off our own hives — never bought from another beekeeper, never blended with honey from anywhere else, never cut with syrup. One beekeeper stands behind it, and you are welcome to come and look at the bees.
Why Carniolan
We keep only Apis mellifera carnica — the grey bee native to Slovenia, protected there by law, and the only bee we have ever kept. It overwinters on small stores, builds explosively with the spring flow, and is famously gentle to work.
But we did not choose it for any of that. We are a Slovenian family four generations into Illinois, and keeping the Slovenian bee is how the craft that crossed with them stays a working trade rather than a story about one.
